ARTICHOKES WITH IBERICO HAM

Alcachofas con Jamón Ibérico

For this recipe, you need the tiny, often purplish-green variety of artichoke, available from ZONA Organic. Serve this dish with a crisp sherry such as a manzanilla, from the seaside town of Sanlúcar de Barrameda.

Prep:  10 mins.  Servings: 4

Ingredients:

• 1 Jar ZONA Organic Halves Artichokes

• 4 Tablespoons Olivar Santaria Extra Virgin Olive Oil

• 8 Slices of Montaraz Iberico Ham, Chopped

• 3 Tablespoons Chopped Fresh Flat Leaf Parsley

ZONA Gourmet Sea Salt Flakes

• Freshly Ground Black Pepper

Preparation

STEP 1

Open Jar of ZONA Organic Artichokes Halves

STEP 2

Heat the oil in a frying pan/skillet, add the artichokes cut side down and sauté for 2 minutes.

STEP 3

Turn them over and sauté the other side for a further 1 minute.

STEP 4

Add the Ibérico ham and cook for a further 4 minutes until crisp and golden.

STEP 5

Remove the pan from the heat. Sprinkle with the salt, parsley, pepper and serve.
